Tomato Soup and Grilled Cheese Casserole: 1 Pure Bite

Description

A comforting casserole combining creamy tomato soup with grilled cheese croutons.

Ingredients

  • 1 can (10.75 oz) condensed tomato soup
  • 1 can (10.75 oz) condensed cream of tomato soup
  • 1 1/3 cups milk
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 slices white bread
  • 4 slices cheddar cheese
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the tomato soups, milk, basil, oregano, salt, and pepper. Pour into the prepared baking dish.
  3. Cut each slice of bread into 4 squares. Place a slice of cheese between two bread squares to make small sandwiches.
  4. Brush the tops of the sandwiches with melted butter.
  5. Arrange the grilled cheese sandwiches over the top of the soup mixture in the baking dish.
  6. Bake for 20-25 minutes, or until the grilled cheese is golden brown and the soup is bubbly.
  7. Let stand for a few minutes before serving.

Notes

  • You can use other types of cheese, such as American or provolone.
  • For extra flavor, add a pinch of red pepper flakes to the soup mixture.
  • If you don’t have condensed cream of tomato soup, you can use another can of condensed tomato soup.
