Description
A classic fairground treat, this funnel cake is crispy on the outside and soft on the inside, perfect with a dusting of powdered sugar.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot or deep fryer to 375°F (190°C).
- Pour the batter through a funnel into the hot oil, moving the funnel in a circular motion to create a lattice pattern.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove the funnel cake from the oil and place on a wire rack set over paper towels to drain.
- Dust generously with powdered sugar before serving.
Notes
- Make sure the oil is hot enough before frying to ensure a crispy funnel cake.
- Do not overcrowd the pot; fry funnel cakes one at a time.
- Serve immediately for best results.
