Ingredients
- 2 cups rolled oats
- 1 cup unsweetened almond milk
- 1 cup diced peaches (fresh or canned)
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
- Streusel topping: 1/4 cup oats, 2 tbsp flour, 1 tbsp coconut oil, 1 tbsp brown sugar
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- Mix oats, baking powder, cinnamon, and salt in a bowl.
- Stir in almond milk, maple syrup, and vanilla until combined.
- Fold in diced peaches.
- Divide mixture evenly into muffin cups.
- Combine streusel ingredients in a small bowl. Sprinkle over each cup.
- Bake 25-30 minutes until golden. Cool 10 minutes before serving.
Notes
- Use frozen peaches if fresh aren’t available.
- Store in airtight container for up to 5 days.
