- 4 boneless, skinless chicken breasts (about 6 oz each)

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 5 ounces fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Prepare Chicken: Season the chicken breasts with Italian seasoning, salt, and pepper.
- Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-6 minutes per side, until golden brown and cooked through (165°F). Remove chicken from skillet and set aside.
- Sauté Aromatics: Reduce heat to medium. Add minced garlic and shallots to the skillet and sauté for 1-2 minutes, until fragrant.
- Add Broth: Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Add Cream and Tomatoes: Stir in heavy cream and sun-dried tomatoes. Bring to a gentle simmer.
- Add Spinach: Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Add Cheese: Stir in Parmesan cheese until melted and the sauce is smooth.
- Return Chicken: Return the seared chicken breasts to the skillet and nestle them into the sauce.
