A hearty and flavorful grain bowl featuring roasted chickpeas and sweet potatoes.
Ingredients
- 1 large sweet potato, cubed
- 1 can (15 oz) chickpeas, rinsed and drained
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 1 cup cooked quinoa or brown rice
- 1 cup mixed greens
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
- Lemon vinaigrette (optional)
Instructions
- Preheat oven to 400°F (200°C).
- On a baking sheet, toss sweet potato and chickpeas with olive oil, smoked paprika, cumin, salt, and pepper.
- Roast for 20-25 minutes, or until tender and slightly crispy.
- Divide cooked grain between two bowls.
- Top with roasted sweet potatoes and chickpeas.
- Add mixed greens, red onion, and parsley.
- Drizzle with lemon vinaigrette, if desired.
Notes
- You can substitute other grains like couscous or farro.
- Add other vegetables like bell peppers or broccoli.
