Description

A hearty and flavorful grain bowl featuring roasted chickpeas and sweet potatoes.


Ingredients

Scale
  • 1 large sweet potato, cubed
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1 cup cooked quinoa or brown rice
  • 1 cup mixed greens
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh parsley
  • Lemon vinaigrette (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss sweet potato and chickpeas with olive oil, smoked paprika, cumin, salt, and pepper.
  3. Roast for 20-25 minutes, or until tender and slightly crispy.
  4. Divide cooked grain between two bowls.
  5. Top with roasted sweet potatoes and chickpeas.
  6. Add mixed greens, red onion, and parsley.
  7. Drizzle with lemon vinaigrette, if desired.

Notes

  • You can substitute other grains like couscous or farro.
  • Add other vegetables like bell peppers or broccoli.
  • Top with your favorite dressing.
