Description
A refreshing cocktail featuring charred pineapple for a smoky sweetness.
Ingredients
- 1/2 fresh pineapple
- 2 oz white rum
- 1 oz lime juice
- 1 oz simple syrup
- 2–3 sprigs fresh mint
- Ice
Instructions
- Cut half of the pineapple into 1-inch thick slices.
- Grill or char the pineapple slices until browned and slightly caramelized.
- Let the charred pineapple cool completely.
- In a shaker, muddle a few pieces of charred pineapple with mint leaves.
- Add white rum, lime juice, and simple syrup to the shaker.
- Fill the shaker with ice and shake well.
- Strain the mixture into a glass filled with ice.
- Garnish with a fresh mint sprig or a small piece of charred pineapple.
Notes
- Adjust the amount of simple syrup based on your sweetness preference.
- You can use a grill pan on the stovetop if you don’t have an outdoor grill.
