Description

A refreshing cocktail featuring charred pineapple for a smoky sweetness.


Ingredients

Scale
  • 1/2 fresh pineapple
  • 2 oz white rum
  • 1 oz lime juice
  • 1 oz simple syrup
  • 23 sprigs fresh mint
  • Ice

Instructions

  1. Cut half of the pineapple into 1-inch thick slices.
  2. Grill or char the pineapple slices until browned and slightly caramelized.
  3. Let the charred pineapple cool completely.
  4. In a shaker, muddle a few pieces of charred pineapple with mint leaves.
  5. Add white rum, lime juice, and simple syrup to the shaker.
  6. Fill the shaker with ice and shake well.
  7. Strain the mixture into a glass filled with ice.
  8. Garnish with a fresh mint sprig or a small piece of charred pineapple.

Notes

  • Adjust the amount of simple syrup based on your sweetness preference.
  • You can use a grill pan on the stovetop if you don’t have an outdoor grill.
