Ingredients

- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 2 tablespoons olive oil
- 1 lime, juiced
- 1/4 cup chopped fresh cilantro
- Salt to taste
- Pepper to taste
Instructions
- Cook quinoa according to package directions using vegetable broth.
- While quinoa cooks, heat olive oil in a skillet over medium heat.
- Add red bell pepper and red onion to the skillet and cook until softened, about 5-7 minutes.
- Stir in black beans and corn and cook until heated through.
- Once quinoa is cooked, add it to the skillet with the bean and vegetable mixture.
- Stir in lime juice and cilantro.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- You can add other vegetables like diced avocado, cherry tomatoes, or spinach.
- Top with your favorite salsa or a dollop of Greek yogurt or sour cream.
