- 1/2 cup grilled corn kernels (fresh or thawed frozen)
- 2 slices whole grain bread
- 1 tsp chili flakes
- 1 tbsp olive oil (divided)
- Salt to taste
- Lime wedge (optional)
Instructions
- Grill the corn kernels in a pan with 1/2 tbsp olive oil until lightly charred.
- Toast the bread until golden and crisp.
- Mash avocado onto toasted bread slices.
- Top with grilled corn and sprinkle chili flakes.
- Drizzle remaining olive oil and add salt. Squeeze lime if desired.
