Ingredients

- 1 tablespoon oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 green chili, chopped (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 2 potatoes, peeled and diced
- 1 cup green peas (fresh or frozen)
- 5 cups fresh spinach, chopped
- 1/2 cup water
- Salt to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion and sauté until golden brown.
- Add minced garlic and grated ginger and cook for 1 minute.
- Add chopped green chili (if using), coriander powder, turmeric powder, and red chili powder. Mix well.
- Add diced potatoes and green peas. Cook for 5-7 minutes, stirring occasionally.
- Add chopped spinach and water. Cover and cook until potatoes are tender, about 10-15 minutes.
- Season with salt and mix well.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the amount of chili based on your spice preference.
- You can use frozen spinach, but fresh spinach is recommended for better flavor and texture.
- Serve hot with rice or roti.
