- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
- 2 cups sliced fresh peaches
- 1/4 cup sugar
- 1/4 cup sliced almonds
- 2 tablespoons butter
- 1 tablespoon honey
Instructions
- In a large bowl, whisk together flour, sugar, and salt.
- In a separate bowl, whisk eggs, milk, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and whisk until smooth batter forms.
- Heat a lightly greased nonstick skillet over medium heat. Pour a thin layer of batter into the skillet, swirling to coat the bottom.
- Cook for 1-2 minutes per side, until golden brown. Repeat with remaining batter.
- In a separate skillet, melt butter over medium heat. Add sliced peaches and sugar. Cook until peaches are soft, about 5-7 minutes.
- In a small saucepan, combine sliced almonds, butter, and honey. Cook over medium heat, stirring constantly, until almonds are golden brown and coated, about 3-5 minutes.
- Fill each crepe with peach mixture and fold. Top with candied almonds.
Notes
- Crepes can be made ahead of time and stored in the refrigerator.
- Adjust the amount of sugar in the peach filling to your preference.
- Other fruits like berries or apples can be used instead of peaches.
