Description

Delicate crepes filled with sweet peaches and topped with crunchy candied almonds.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups sliced fresh peaches
  • 1/4 cup sugar
  • 1/4 cup sliced almonds
  • 2 tablespoons butter
  • 1 tablespoon honey

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. In a separate bowl, whisk eggs, milk, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and whisk until smooth batter forms.
  4. Heat a lightly greased nonstick skillet over medium heat. Pour a thin layer of batter into the skillet, swirling to coat the bottom.
  5. Cook for 1-2 minutes per side, until golden brown. Repeat with remaining batter.
  6. In a separate skillet, melt butter over medium heat. Add sliced peaches and sugar. Cook until peaches are soft, about 5-7 minutes.
  7. In a small saucepan, combine sliced almonds, butter, and honey. Cook over medium heat, stirring constantly, until almonds are golden brown and coated, about 3-5 minutes.
  8. Fill each crepe with peach mixture and fold. Top with candied almonds.

  • Crepes can be made ahead of time and stored in the refrigerator.
  • Adjust the amount of sugar in the peach filling to your preference.
  • Other fruits like berries or apples can be used instead of peaches.
