Description

Creamy chia pudding with tropical flavors of mango, passion fruit, and coconut.


Ingredients

Scale
  • 1/2 cup chia seeds
  • 2 cups coconut milk
  • 2 tablespoons maple syrup (or other sweetener)
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh mango
  • 1/2 cup passion fruit pulp
  • 1/4 cup shredded coconut

Instructions

  1. In a bowl, combine chia seeds, coconut milk, maple syrup, and vanilla extract. Stir well to prevent clumping.
  2. Let the mixture sit for 5-10 minutes, then stir again.
  3. Cover and refrigerate for at least 2 hours, or preferably overnight, until thickened.
  4. To serve, layer the chia pudding with diced mango, passion fruit pulp, and shredded coconut in glasses or bowls.
  5. Enjoy immediately or store in the refrigerator for up to 3 days.

Notes

  • Adjust the amount of sweetener to your preference.
  • You can use frozen mango if fresh is not available. Thaw before dicing.
  • Other fruits like pineapple or berries can be added.
  • For a thicker pudding, add a little more chia seeds. For a thinner pudding, add a little more coconut milk.
