Description
This recipe features succulent chicken and tender mushrooms enveloped in a rich, savory garlic sauce. It’s an ideal one-pan meal that comes together quickly, making it perfect for busy weeknights. The dish offers a comforting and satisfying experience that is both flavorful and nutritious.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts (or thighs), cut into 1-inch pieces
- 1 tsp salt, divided
- ½ tsp black pepper, divided
- 2 tbsp olive oil
- 1 lb cremini mushrooms, sliced
- 6 cloves garlic, minced
- ½ cup chicken broth
- ½ cup heavy cream
- ¼ cup fresh parsley, chopped
Instructions
- Season the chicken pieces generously with ½ teaspoon of salt and ¼ teaspoon of black pepper. Ensure all pieces are evenly coated.
- Heat 2 tablespoons of olive oil in a large skillet or pan over medium-high heat. Once hot, add the seasoned chicken in a single layer, making sure not to overcrowd the pan.
- Cook the chicken for 3-4 minutes per side, or until it’s golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set it aside.
- Add the sliced cremini mushrooms to the same skillet, adding a little more oil if needed. Cook the mushrooms for 5-7 minutes, stirring occasionally, until they are softened and have released their moisture.
- Stir in the minced garlic into the skillet with the mushrooms. Cook for an additional 1 minute until fragrant, being careful not to burn the garlic.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan to deglaze. Bring the mixture to a simmer and let it cook for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, remaining ½ teaspoon of salt, and ¼ teaspoon of black pepper. Bring the sauce to a gentle simmer and cook for 2-3 minutes, or until it thickens slightly to your desired consistency.
- Return the cooked chicken to the skillet, tossing gently to coat it evenly in the creamy garlic mushroom sauce.
- Remove the skillet from the heat and stir in the fresh chopped parsley. Serve immediately with your favorite side dishes like rice, pasta, or mashed potatoes.
Notes
- For extra flavor, consider marinating the chicken in a little olive oil and garlic powder for 15-30 minutes before cooking.
- If you prefer a thicker sauce, you can add 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water to the simmering sauce in step 7.
- Fresh herbs like thyme or rosemary can be added along with the parsley for an aromatic twist.
