Instructions

  1. Season the chicken pieces generously with ½ teaspoon of salt and ¼ teaspoon of black pepper. Ensure all pieces are evenly coated.
  2. Heat 2 tablespoons of olive oil in a large skillet or pan over medium-high heat. Once hot, add the seasoned chicken in a single layer, making sure not to overcrowd the pan.
  3. Cook the chicken for 3-4 minutes per side, or until it’s golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set it aside.
  4. Add the sliced cremini mushrooms to the same skillet, adding a little more oil if needed. Cook the mushrooms for 5-7 minutes, stirring occasionally, until they are softened and have released their moisture.
  5. Stir in the minced garlic into the skillet with the mushrooms. Cook for an additional 1 minute until fragrant, being careful not to burn the garlic.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan to deglaze. Bring the mixture to a simmer and let it cook for 2-3 minutes to reduce slightly.
  7. Stir in the heavy cream, remaining ½ teaspoon of salt, and ¼ teaspoon of black pepper. Bring the sauce to a gentle simmer and cook for 2-3 minutes, or until it thickens slightly to your desired consistency.
  8. Return the cooked chicken to the skillet, tossing gently to coat it evenly in the creamy garlic mushroom sauce.
