- 1 tablespoon toasted sesame seeds, for garnish (optional)
Instructions
- Cook the noodles according to package directions until al dente. Drain well, rinse with cold water to prevent sticking, and toss with 1 teaspoon of sesame oil. Set aside.
- While noodles cook, prepare the chicken: In a medium bowl, combine the cut chicken pieces with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Toss to coat evenly and set aside for at least 5 minutes. This step helps tenderize the chicken.
- Prepare the sauce: In a small bowl, whisk together the chicken broth, ¼ cup soy sauce, oyster sauce, brown sugar, rice vinegar, and white pepper. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 4-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pan and set aside.
- Reduce the heat to medium. Add the minced garlic and grated ginger (if using) to the same pan. Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
- Pour the prepared sauce into the pan and bring it to a simmer, stirring continuously. Let it simmer for 1-2 minutes until it slightly thickens. The sauce should coat the back of a spoon.
- Add the cooked chicken back into the pan with the sauce, tossing to coat.
- Add the drained noodles to the pan and toss everything together until the noodles are fully coated with the sauce and heated through, about 1-2 minutes.
- Serve immediately, garnished with sliced green onions and toasted sesame seeds, if desired.
