  • 2 tablespoons vegetable oil (or other neutral oil)
  • 68 cloves garlic, minced
  • 1 tablespoon grated fresh ginger (optional)
  • ½ cup chicken broth
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar (or honey/maple syrup)
  • 1 teaspoon rice vinegar
  • ¼ teaspoon white pepper
  • 23 green onions, sliced, for garnish
  • 1 tablespoon toasted sesame seeds, for garnish (optional)

Instructions

  1. Cook the noodles according to package directions until al dente. Drain well, rinse with cold water to prevent sticking, and toss with 1 teaspoon of sesame oil. Set aside.
  2. While noodles cook, prepare the chicken: In a medium bowl, combine the cut chicken pieces with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Toss to coat evenly and set aside for at least 5 minutes. This step helps tenderize the chicken.
  3. Prepare the sauce: In a small bowl, whisk together the chicken broth, ¼ cup soy sauce, oyster sauce, brown sugar, rice vinegar, and white pepper. Set aside.
  4. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 4-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pan and set aside.
  5. Reduce the heat to medium. Add the minced garlic and grated ginger (if using) to the same pan. Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
  6. Pour the prepared sauce into the pan and bring it to a simmer, stirring continuously. Let it simmer for 1-2 minutes until it slightly thickens. The sauce should coat the back of a spoon.
  7. Add the cooked chicken back into the pan with the sauce, tossing to coat.
  8. Add the drained noodles to the pan and toss everything together until the noodles are fully coated with the sauce and heated through, about 1-2 minutes.
  9. Serve immediately, garnished with sliced green onions and toasted sesame seeds, if desired.
