Description

Easy and healthy cottage cheese pinwheels.


Ingredients

Scale
  • 2 large whole wheat tortillas
  • 1/2 cup cottage cheese (full fat)
  • 1/4 cup finely diced bell pepper (any color)
  • 1/4 cup finely diced cucumber
  • 2 tablespoons chopped fresh dill or chives
  • Salt and pepper to taste

Instructions

  1. Lay tortillas flat.
  2. Spread an even layer of cottage cheese over each tortilla.
  3. Sprinkle diced bell pepper, cucumber, and fresh herbs over the cottage cheese.
  4. Season with salt and pepper.
  5. Tightly roll up each tortilla.
  6. Slice each roll into 1-inch pinwheels.
