Ingredients

- 2 large whole wheat tortillas
- 1/2 cup cottage cheese (full fat)
- 1/4 cup finely diced bell pepper (any color)
- 1/4 cup finely diced cucumber
- 2 tablespoons chopped fresh dill or chives
- Salt and pepper to taste
Instructions
- Lay tortillas flat.
- Spread an even layer of cottage cheese over each tortilla.
- Sprinkle diced bell pepper, cucumber, and fresh herbs over the cottage cheese.
- Season with salt and pepper.
- Tightly roll up each tortilla.
- Slice each roll into 1-inch pinwheels.
- Serve immediately or chill before serving.
