Description

A delicious calzone filled with chicken, spinach, and mozzarella cheese.


Ingredients

  • 1 pound pizza dough
  • 2 cups cooked chicken, shredded
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup ricotta cheese
  • 0.25 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Egg wash (1 egg beaten with 1 tablespoon water)
  • Marinara sauce for dipping

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the shredded chicken, spinach, mozzarella cheese, ricotta cheese, Parmesan cheese, minced garlic, oregano, salt, and pepper.
  3. Divide the pizza dough in half. On a lightly floured surface, roll each half into a 12-inch circle.
  4. Spoon half of the chicken mixture onto one half of each dough circle, leaving a 1-inch border.
  5. Fold the other half of the dough over the filling to create a crescent shape. Crimp the edges to seal.
  6. Brush the calzones with egg wash and cut several slits in the top for steam to escape.
  7. Place calzones on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes, or until golden brown and cooked through.
  9. Serve hot with marinara sauce for dipping.

Notes

  • You can use rotisserie chicken for convenience.
  • Make sure to squeeze the spinach dry to prevent a soggy calzone.
