Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup sliced mushrooms
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup cold butter, cubed
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned.
  3. Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
  4. Stir in peas, corn, and mushrooms.
  5. Sprinkle flour over the vegetables and chicken and cook for 1 minute, stirring constantly.
  6. Gradually whisk in chicken broth and milk. Bring to a simmer, then stir in thyme, salt, and pepper.
  7. Pour mixture into a 9×13 inch baking dish.
  8. In a separate bowl, whisk together flour, baking powder, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  9. Stir in milk until just combined. Drop spoonfuls of the dough over the chicken mixture.
  10. Bake for 25-30 minutes, or until topping is golden brown and filling is bubbly.
  11. Let stand for 10 minutes before serving.
