- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup sliced mushrooms
- 3 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup cold butter, cubed
- 1/2 cup milk
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned.
- Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
- Stir in peas, corn, and mushrooms.
- Sprinkle flour over the vegetables and chicken and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth and milk. Bring to a simmer, then stir in thyme, salt, and pepper.
- Pour mixture into a 9×13 inch baking dish.
- In a separate bowl, whisk together flour, baking powder, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in milk until just combined. Drop spoonfuls of the dough over the chicken mixture.
- Bake for 25-30 minutes, or until topping is golden brown and filling is bubbly.
- Let stand for 10 minutes before serving.
