A refreshing cocktail featuring charred pineapple for a smoky sweetness.
Ingredients

- 1/2 fresh pineapple
- 2 ounces white rum
- 1 ounce lime juice
- 1/2 ounce simple syrup
- Ice
- Fresh mint or lime wedge for garnish
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Cut half of the pineapple into 1-inch rings.
- Grill the pineapple rings for 2-3 minutes per side, until slightly charred.
- Let the charred pineapple cool.
- In a cocktail shaker, muddle a few pieces of charred pineapple.
- Add the white rum, lime juice, and simple syrup to the shaker.
- Fill the shaker with ice and shake well until chilled.
- Strain the mixture into a glass filled with fresh ice.
- Garnish with fresh mint or a lime wedge.
Notes
- Adjust the amount of simple syrup to your sweetness preference.
- For a spicier kick, add a thin slice of jalapeño when muddling the pineapple.
- You can char the pineapple ahead of time and store it in the refrigerator.
