  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce (plus extra for drizzling)
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the sweet potatoes, pierce them a few times with a fork, and place on a baking sheet lined with foil.
  2. Rub each potato lightly with olive oil and a pinch of salt. Bake for 30–40 minutes, or until tender when pierced with a fork.
