- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce (plus extra for drizzling)
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese (optional)
- 2 tablespoons chopped green onions (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Scrub the sweet potatoes, pierce them a few times with a fork, and place on a baking sheet lined with foil.
- Rub each potato lightly with olive oil and a pinch of salt. Bake for 30–40 minutes, or until tender when pierced with a fork.
- While the potatoes bake, in a medium bowl combine shredded chicken, barbecue sauce, smoked paprika, salt, and pepper. Stir until well coated.
- Once the sweet potatoes are done, allow them to cool slightly. Slice each one open lengthwise and gently fluff the insides with a fork.
- Spoon the BBQ chicken mixture evenly into each sweet potato. Top with shredded cheese if desired.
- Return stuffed potatoes to the oven for 5 minutes, just until the cheese melts.
- Garnish with chopped green onions and an extra drizzle of barbecue sauce before serving.
