A vibrant mix of grilled corn, juicy tomatoes, and zesty lime creates a refreshing salsa perfect for summer gatherings. Serve with chips, tacos, or grilled meats.

Ingredients

Scale
  • 2 cups fresh corn kernels (about 3 ears)
  • 1 cup diced tomatoes
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1/2 tsp salt

  1. Grill corn on medium heat until lightly charred, about 8-10 minutes. Let cool and cut kernels from cobs.
  2. Combine corn, tomatoes, red onion, cilantro, lime juice, and jalapeño (if using) in a bowl.
  3. Season with salt and mix thoroughly.
  4. Chill for 30 minutes before serving to let flavors blend.
