- 4–5 fresh jalapeño peppers, finely chopped (seeds removed for milder heat)
- 2 cups granulated sugar
- 1/4 cup lemon juice
- 1/2 teaspoon salt
Instructions
- Combine peaches, jalapeños, sugar, lemon juice, and salt in a large pot.
- Cook over medium heat, stirring frequently, until mixture thickens (35-45 minutes).
- Test thickness by placing a spoonful on a chilled plate – it should hold shape when tilted.
- Pour hot jam into sterilized jars, leaving 1/4-inch headspace if canning.
- Cool completely before refrigerating or freezing.
